Cinco de Mayo Recipe Round-up

Cinco de Mayo is just a week away and around here that means you better to get your stretchy pants ready and your liver in check because the way Texans celebrate is with mucho tacos y tequila!  Every great holiday comes with great food and this one ranks up at the top of the "great food" list as far as I'm concerned.  If I'm being honest though... pretty much every sunny, warm day in Austin Texas may as well be Cinco de Mayo. People rank restaurants based on which have the best patio, tacos and of course margaritas. As soon as it hits 75 sunny people drop all sense of responsibility and flock to said patios. Or maybe that's just me... Like two good born and bred Austenite's should, at our house some version of Tex Mex is on the menu at least once a week, whether it be grilling fajitas or taco salad or Tex Mex inspired crab cakes; we love all things cilantro, jalapeno and lime!

I thought what better time than now to share some of my favorite Tex Mex recipes so that you can prep for the festivities next week too!

Queso Fundido with Chorizo

This is a different style of queso than you may be used to, it's not creamy and dippable, it's stringy and gooey and bubbly.  Give it a try, you will not be disappointed.

Guacamole en Molcajete

If you don't have a Molcajete and you love guacamole then you need to get one.  Hands down best way to make the stuff!

Hot Jalepeno Corn Dip

The only thing better than fresh, sweet corn in the summer is combining that corn with spicy jalepenos! This recipe calls for corn from a can which is great when in a pinch, but if it's summer and the corn is good you better believe I'm putting fresh corn in this dip!

Chili Lime Chicken

This is probably my most used recipe on this list.  I use this chicken for fajitas or salads or we will just eat it plain!  It is delicious!

Chicken Tortilla Stack

Rather than making this in a stack, I like to layer all the ingredients in a pyrex casserole dish.  I use a small one if it is just us, but if we are having people over I use a 9x13 dish and it makes a super easy entrée for a dinner party.  It is also a GREAT one to take to friends when they've had a baby or been sick.

Ok, this one is a little bit of a long shot for this list, but HELLO?? Tex Mex + Fries??? You can't go wrong!  And we can count these as healthy fries since they are baked, wink wink.

Another shameless plug but it is justified on this list, I make it so much in the summer that my husband starts to BEG me not to make it anymore.  But I never listen because I love it too much.  I just can't get enough!

Tres Leches Cake

Tres Leches is one of my very favorite cakes. People either love it or HATE it.  And it has to be done just perfectly, but when it's right it is AMAZING. The dense cake, soggy from the sweet milks, the whipped topping, sweet but not too sweet.... I prefer it with strawberries and caramel drizzle.  Not chocolate, never ever chocolate.  As you can see I have absolutely no opinions on this cake.
